Parsnip and apple veloute with roast parsnip cone,
poached local apple and apple cider

Tasting of duck
Sweet cure foie gras & confit duck leg terrine, smoked Gressingham duck breast, beetroot and orange relish and poached golden raisins

Scallop
Pan fried Cornish scallops with butternut squash puree, candied walnuts, shallot chutney, garden apple and cucumber relish

Partridge
Roast grey leg partridge breast with haricot beans, wild mushrooms, garlic and truffle emulsion

Salmon
Smoked Lock Duart salmon and pickled cucumber, Keta Caviar, horseradish relish and horseradish cream

Beef
Roast fillet of Scottish beef, braised shallots, garlic and wild mushrooms, galette potatoes, buttered kale

Coq au Vin
Braised poussin in red wine and tarragon, olive oil pomme puree, roast shallot and pancetta

Tasting of Welsh lamb
Roast cutlet, braised shoulder, pain d’epice sweetbread with pearl barley, lamb broth

Cod
Lightly salted Cornish cod, salt cod chowder, clams, mussels and shrimp, root vegetables and herb oil

Bouillabaisse
‘Today’s fish melody’ Bouillabaisse broth, baby fennel and saffron potatoes

Vanilla crème brulee with white chocolate, figs and blackberries, candied peel, blackberry coulis

Poached strawberries, meringue, black pepper and sesame tuille, strawberry sorbet mint syrup and Champagne sabayon
